Friday Fun Day: Pumpkin Gooey Goodness Cake!!

Since everyone seems to be declaring it "FALL" now (whatever, I just turned the air conditioning on) I thought I might as well bust out with a pumpkin recipe!! I named it the Pumpkin Gooey Goodness Cake...although it has other names if you Google it :) Sarah and I baked it last Wednesday and it was a huge hit all around. If you check out the ingredients, how could it not be??!!

Pumpkin Gooey Goodness Cake
1 box yellow cake mix
1 14oz can of pumpkin puree (not pie filling)
1 teaspoon pumpkin pie spice (optional, but if you have it, use it!!!)
14 oz can of sweetened condensed milk (i actually only used about 2/3 of the can)
1 8oz tub of Cool Whip (i used extra creamy)
1/2 bag of Heath bits OR 20 miniature Heath bars pounded/chopped into bits
Carmel sundae sauce (optional, too but GOOD!!!)


1. With a spoon, mix together cake mix, pumpkin puree and pumpkin pie spice until a batter forms.
2. Spread batter into a greased 9x9 (or similar) baking dish. Bake at 350 for 30-40 minutes or until a toothpick comes out clean.
3. Let cake cool completely. With the bottom of a wooden spoon, poke holes all over the top of the cake.
4. Now the good part.....pour the sweetened condensed milk all over the top of the cake, filling in the holes.
5. Refrigerate cake for at least an hour so the condensed milk has time to soak in :)
6. Spread Cool Whip over the cake, Sprinkle on Heath bits and drizzle with caramel sauce.
7. Refrigerate for 3-4 hours or overnight.

FYI, these are the Heath bars I used..i couldn't find the "bits" so I just put 20 bars in a plastic Ziploc bag and pounded with a meat mallet :)

I love this recipe because it's easy for kids to help, too!! Enjoy every last morsel!!!!
