Seven on Sunday~ Week 38


Day 1: Sunday ~ I am always so thrilled to see the results of my Challengers every 3 weeks! These ladies work SO hard, push through all kinds of struggles and see results in so many ways aside from the scale. It's truly amazing and I am blessed to have this "job!"

Day 2: Monday ~ Did a little shopping for my new nephew--walked into the Janie and Jack Outlet and I could have bought the entire store! It was tooo cute for words and ALMOST made me want another baby! HA!  Let's just say my nephew will be the cutest little preppy baby!!!

Day 3: Tuesday ~ Whipped up one of my fave crockpot recipes--Cajun Beef! It's soooo delish...and healthy! You can get the recipe HERE. 


Day 4: Wednesday ~ My good 'ol 4 Runner reached 200,000 miles today! I had to drive around the Target parking lot twice so I could get pictures when the odometer turned! LOL!



Day 5: Thursday ~ Sarah's first little Pre-K field trip to the library. I didn't get to go but it looked like fun! Why is she so much bigger than all the other kids??!


With Daddy out of town, we had to get some business done while Brooke was at soccer practice! Buddy is thrilled with trips to Safeway and Costco on a Thursday night!



Scott arrived in Chicago for our sweet nephew's baptism! It's been awhile since he's fed a baby!!


Day 6: Friday ~ Brooke had an orthodontist appointment in the morning and he said she would have her braces off by the end of this school year!! Yippeee! Time flies!!!



A perfect Friday night for Will--the iPad and his favorite "soda"--Coco Rico!


Day 7: Saturday ~ Grandpa came up and we had a picnic in Napa and played at the park. It was a beautiful day!!

"Fall" Crockpot Chili Recipe

This chili is a HIT every single time I make it...can you guess the Secret Ingredient??!! Perfect for fall and football watching!!!!




21 Day Fix Crockpot Fall Chili
** Serves 6+; this recipe can be made vegetarian--just omit the turkey
21 Day Fix~ 1 ½ cups = 1 red, 1 yellow, 1 green, 1 blue (if you use cheese)


1 lb lean ground turkey (93% lean or more)
1 medium onion, diced
3 cloves minced garlic
1 green pepper, diced
1 15 oz. can diced fire roasted tomatoes, low sodium
1 28oz can of low sodium crushed tomatoes
1 15 oz. can chili beans
1 15 oz. can kidney beans
1 15 oz. can black beans
1 cup frozen corn
1 15 oz. can puréed pumpkin (not pie filling)
1 tablespoon chili powder
1/2 tablespoon cumin
Salt to taste (don’t add salt until the very end...you may not even need any!)
Shredded cheese and scallions (optional)


  1. In a large pan, brown ground turkey, breaking up meat as it cooks.
  2. When the meat is cooked, place everything in crockpot and stir to combine.
  3. Cook on high for 4-5 hours or low for 6-7 hrs.
  4. Serve with shredded cheddar cheese and scallions (optional).

21 Day Fix Approved ~ Crockpot Pork with Apples


Fall was in the air here yesterday, so I busted out the crockpot in the morning and dinner was waiting for me when I got home!
5 Ingredients! Simple! And it made my whole house smells like fall! I will also add diced sweet potatoes when I make it again😍

It'Honey Pork and Apples
Ingredients:
1 (3­-4 lb) pork tenderloin
2 large granny smith apples, sliced
1⁄2 cup honey
1 tablespoon cinnamon (to taste)
1⁄2 cup of water or chicken stock (to prevent it from drying out)
Instructions:
1. Slice small slits in pork tenderloin. Place 1­-2 apple slices per slit. Season pork with salt and pepper.
2. Place 3⁄4 of remaining apple slices in bottom of crockpot.
3. Drizzle 1⁄2 of the honey over apple slices.
4. Place pork on top of apple slices.
5. Sprinkle cinnamon over everything.
6. Place remaining apple slices on top and drizzle the remaining honey over
everything.
7. Place lid on and cook on low for 6-7 hours or until pork is tender is falls apart easily.
8. Remove from slow cooker, slice and serve with apples on top.

Seven on Sunday ~ Week 37


Day 1: Sunday ~ Brookey and I spent the day packing for Science Camp and picking up last minute items at Target! She was so excited!!


Day 2: Monday ~ I drove the girls up to Walker Creek Ranch about an hour away and stayed for the little Opening Ceremony. As soon as we got there the kids were all so excited and having so much fun--i didn't even feel bad leaving her! The got the cabin mates they requested and all was good with the world! They were in for a week of fun!


Day 3: Tuesday ~ Brookey was gone and it felt WEIRD!!! Sarah probably had the hardest time this week--she cried every morning at school and said she missed her sister! (she's a little drama queen though) Here's a project she made on Tuesday--she's definitely a sprinkles girl for sure!


Day 4: Wednesday ~ Her teacher would send me pictures during the day so I knew she was fine...when I left her each morning, she was a train wreck and all tears!! Her teacher's daughter is in Brooke's class and was also at Science Camp so these two could relate to each other all week missing someone!!

Day 5: Thursday ~ It's been 4 days since Brooke left and we've  been going about our business just fine but today I REALLY missed her and was ready for her to come home! It's just a strange feeling having one part of our family gone for so long--something was definitely missing (mostly her extremely loud singing in the morning!)

But I just remembered this quote and knew this time away would teach her so much about how to get along away from home!

Day 6: Friday ~ Pick up day from Science Camp!! Do you think Brooke got homesick??!!! Not ONE STINKING BIT. The majority of her class mates were, though and it was cute to see them reunited with their parents.

I did make sure during camp to send her funny, upbeat letters and I never once wrote that I missed her (which they asked us to do so the kids wouldn't be sad). So instead I sent her funny, printed Snap Chat pictures of us and just kept it really fun. I am hoping that helped but I just really think she is fine without us and it was a nice break from the grind of school and her annoying little sister :)

 Brooke was EXHAUSTED after camp. Just wiped out on Friday and in a super pissy mood :) She passed out cold before 8pm and slept like a rock. Being outside with no wi fi for a week is exhausting :) 

Day 7: Saturday ~ Brookey was back, we all had a giant sleepover in our room and all was right with the world again. Back to Soccer Saturdays!

Seven on Sunday ~ Week 36

Day 1: Sunday ~ Sunday Funday! I am truly, truly blessed to have such amazing neighbors and friends in our 'hood!! And our kids all get all get along!!!



Day 2: Monday ~ Labor Day! Very little "laboring" went on today...Brooke actually worked on homework a little and I think I got a nap in.....and the kids got in some Snaps :)



Day 3: Tuesday ~ This was SUCH a busy day all around! Work was crazy and the whole day just flew by!!! I did check my email after work and these two pics popped up--2016 soccer pics!  They both truly love soccer....picture day, though...not so much :(


Day 4: Wednesday ~ My "free" day with no kids! "Free" --yeah right! I have an entire room to paint at home but instead this day consisted of working, car washing, laundry, grocery shopping, errand running...and OF COURSE a Target run....they have the CUTEST girls workout gear now!! I love this #goals shirt for Brookey! Needless to say, that room STILL isn't painted!


Day 5: Thursday ~ Just some Thursday night sparring with Supergirl and some dude who wears one sock with shorts...no need to worry...everything is normal here.


Day 6: Friday ~ Happiness is new Play Doh and the weekend with Grandma and Grandpa!

Oh, and this is what happens when your amazing friend drops off Sift cupcakes at your doorstep...


Day 7: Saturday ~ Fresno Fun! It was HOT...and always fun :)

 Me and my bestie...we've been friends for 33++ years...no matter how much time passes, it's always the same...good times, we always have each other's back. Love this girl!!!

 Class of 1995 at Edison High was the BEST! I am proud to call all of these awesome people my friends!!!


Besties and the hubbys.....we don't get together nearly enough!! We need to change that STAT!

Crazy week and now it's Sunday and we are getting everything ready to send Brookey off to Science Camp all week!!! See ya'll next week!!!

Chicken Parmesan Soup

Chicken Parmesan Soup

Ingredients:
3 garlic cloves, minced
1 green bell pepper, chopped
1 can (14.5 ounces) crushed tomatoes
2 -3 (raw) boneless, skinless chicken breasts
3 cups chicken broth, plus additional if needed
1/2 cup chopped white onion
1/2 cup shredded Parmesan cheese, plus extra for garnish
1 tablespoon chopped fresh basil, chopped
2 teaspoons chopped fresh oregano
1/8 teaspoon red pepper flakes (or more if you like it spicy!)
½ cup (uncooked) small pasta (whole wheat is best)
Chopped fresh basil or parsley, for garnish

Instructions:

1. In slow cooker, stir together garlic, bell pepper, crushed tomatoes, chicken, broth, onion, 1/3 cup cheese, basil, oregano and red pepper flakes. Cook on high 3 1/ 2 hours or on low 5-6 hours.
2. Transfer chicken breasts to cutting board and coarsely shred; return to slow cooker. Stir in pasta. Cook on high 30 minutes longer or until pasta is cooked al dente. If soup becomes too thick after pasta is cooked, stir in additional broth until desired consistency is reached, and warm through.
3. Serve garnished with extra Parmesan cheese and chopped basil or parsley.

21 Day Fix Lasagna Soup

Turkey Lasagna Soup

Ingredients:
1 pound lean ground turkey (or ground beef)
1 (24 ounce) jar of your favorite tomato basil marinara, Rao’s is awesome!
4 cups chicken stock, low­ sodium (more or less depending on consistency desired)
1/2 teaspoon kosher or sea salt
1/2 teaspoon black pepper, to taste
1⁄2 teaspoon dried oregano
8 whole wheat lasagna noodles, broken into fourths
1 cup (part skim) mozzarella cheese
1/2 cup ricotta cheese, reduced fat
Fresh basil for garnish, optional

Instructions:
1. In a skillet over medium heat, cook ground turkey, breaking up with a fork.2. Add turkey to slow cooker, along with marinara, chicken broth, parsley sprigs, salt, and pepper. Cover and cook on low 4­-6 hours.
3. The last 30 minutes of cooking time, add broken lasagna noodles, mozzarella. and basil.
4. Check noodles to make sure they are tender, but not mushy.
5. Serve in bowls with a dollop of ricotta cheese and garnish with fresh basil
