Seven on Sunday ~ Week 43

Day 1: Sunday ~It was so fun meeting my mom and Kendall in Santa Cruz! The Mystery Spot was so cool!!!

Yep, tourists!!!




Less gravity??! Who really knows??!
We survived! And we still don't know what the Mystery is!!!


Day 2: Monday ~ Is this the year for the Cubs?!! Maybe??!!

Day 3: Tuesday ~  Killing time in the car with Snapchat :)

Day 4: Wednesday ~ This is Will's idea of a perfect playdate--Minecraft followed by a math showdown with his bestie! I have NEVER smiled like that when I had to do math!!!

Day 5: Thursday ~ I got to stop by Sarah's little preschool  Halloween celebration today on my break from work. Then I went to work in Bubba's classroom. I swear, my kids have the SWEETEST classes and are surrounded by such awesome little kiddos! They are blessed!


Day 6: Friday ~ Will showing off his Mary Grotto that he made in 2nd grade. 2nd grade us SUCH a great year for the kids at our school! It's a HUGE year where they grow so much academically AND spiritually. I have seen it in both in Brooke and Will- it's just amazing. Will's teacher came up to me this week and said, "You know, that Will....he's just SOOOOOO faith filled, Mrs. Rooney!" After I made sure she was talking about the correct WILL, I just nodded and smiled :) Yes, he is!! #weird #isthismyson ??

Day 7: Saturday ~ We spent Saturday furniture shopping!!!! We checked out this AMAZING place called Living Spaces--holy cow, if you are in the Bay Area CHECK IT OUT! It's like heaven on earth for hone decor! They also had a game room and "daycare" on site so Will and Sarah played video games while we shopped! Crazy good deals!!!

 After that, we hit up the Pottery Barn outlet! Crazy good deals at both places!!!

 After all the shopping, we worked up an appetite and tried a great place in Alameda with a view of SF! It was DELISH!!


 And that wraps up another week!! This week is Halloween and the entire week will be CRAY!!! Wish me luck ! XOXO

Seven on Sunday ~ Week 42!


Day 1: Sunday ~ So Will got his first EVER "professional" haircut today! Scott's been buzzing his hair forever. I think I took him to Super Cuts when he was about 3 and he screamed so loud they made us leave. #epicfail

FINALLY he agreed to get hair cut!!! I showed the gal this pic (LOL!) to use as a guide...I think she did pretty well!! He even lets me style it every morning!!!



Day 2: Monday ~ More rain!! The girls were loving it! I think it's going to be a wet winter here--finally!! There is a ton more rain predicted this week, too!! I better get Sarah some new rain boots!


Day 3: Tuesday ~ Will's sweet class got to lead Rosary for the school. He got to do a pretty long reading too...it was so sweet!!


Day 4: Wednesday ~ My babies!!! 6th and 2nd Grade. Sarah's pics haven't come yet! Brooke's first and only pic she'll have with braces!!


Day 5: Thursday ~ This girl! She drives me freaking NUTS sometimes but can also bring so much joy with her smile! LOVE HER!!


Day 6: Friday ~ Helping me plan our weekend meals! He's no help though...all he wants is fried chicken, pizza, hot dogs, etc :)


Day 7: Saturday ~ Pumpkin Patch Day!!!! It's always a good time...I am just waiting for the kids to tell me they don't want to go anymore. Brooke is getting REALLY close! She ripped her pants on something and threw a very pre teen-like FIT and we left shortly thereafter. #neveradullmoment

Crockpot Sicilian Style Stew

This surprisingly easy Martha Stewart recipe is the BOMB! Such a great alternative (with a little twist!) to traditional stew!

3 lbs stew meat or beef chuck (I used tri tip!!), cut into chunks
1 large onion, sliced
1/2 cup red wine
1 28oz can whole tomatoes
1 bulb fennel, sliced
1 large sprig rosemary
2 large strips of orange zest
1 cup pitted green olives, sliced
Olive oil for browning meat

1. Season meat with salt and pepper and brown in a large non stick skillet and about 1-2 teaspoons of olive oil. Transfer to crockpot.
2. Add wine to pan and scrap off any brown bits; transfer to crockpot. 
3. To crockpot, add onions, fennel, tomatoes, rosemary and orange zest.
4. Cover and cook on low 7-8 hours or HIGH 4-5 hours until meat is super tender. Remove rosemary sprig and orange zest.
5. Stir in olives and serve with crusty bread, mashed potatoes, polenta ..and it's fine just on it's own too!!!

Seven on Sunday ~ Week 41


Day 1: Sunday ~ She's "out of the box" alright!!!! LOL!!


Day 2: Monday ~ Working hard on his "Mary Grotto" project for 2nd grade. It's basically a decorated shoe box that commemorates Mary. I remember helping Brookey with hers and we just finally tossed it when we moved! It's neat to see how different the kids do things. Of course, I didn't take a picture of the final product! DOH!


Day 3: Tuesday ~ Will's 2nd Grade class project that was auctioned off at the school auction on Saturday. It's adorable and it says "Do all things with great love." Fast forward to Saturday--we bid on it and won :) Will was super excited!


Day 4: Wednesday ~We had so many errands and returns to do at the Mall so I promised her a ride on the Carousel !!


Day 5: Thursday ~Brooke does all of these specialty "hair masks" so Sarah agreed to let her do one her! She's waiting for the concoction of egg, avocado and coconut oil condition her hair!!! HA!


Day 6: Friday ~ It was a rainy 12:15 dismissal day so it was a perfect day to cozy up inside and bake cookies!


In the morning, Sarah picked out her Halloween costume...here's part of it...any guesses??


Day 7: Saturday ~ Bubba had the game of his life in the morning with two goals and an assist..one goal with his LEFT FOOT! I think it was his team's first win of the season (they suck bad). Clearly, the girls weren't interested--too busy with ChapSnat. HA!


After that, it was off to the Prom for the annual school auction. It's always such a great time!!

Crockpot Turkey Lasagna Soup

It doesn't get much easier or delicious than this! It's like having lasagna without the hour of prep work and cooking! And guess what? It's pretty darn healthy, too!!

Turkey Lasagna Soup

Ingredients:
1 pound lean ground turkey (or ground beef)
1 (24 ounce) jar of your favorite tomato basil marinara, Rao’s is awesome!
4 cups chicken stock, low​ sodium (more or less depending on consistency desired)
1/2 teaspoon kosher or sea salt
1/2 teaspoon black pepper, to taste
1∕2 teaspoon dried oregano
8 lasagna noodles, broken into pieces (whole wheat noodles are best(
1 cup (part skim) mozzarella cheese
1/2 cup ricotta cheese, reduced fat
Fresh basil for serving, optional  

Instructions:
1. In a skillet over medium heat, cook ground turkey, breaking up with a fork.
2. Add  turkey to slow cooker, along with marinara, chicken broth, parsley sprigs, salt, and  pepper. Stir to combine. Cover and cook on low 4-​­6 hours.
3. The last 30 minutes of cooking time, add broken lasagna noodles, mozzarella. and  basil.
4. Check noodles to make sure they are tender, but not mushy.
5. Serve in bowls with a dollop of ricotta cheese and garnish with fresh basil

Seven on Sunday ~ Week 40


Day 1: Sunday ~ Made a trip to Michael's to update the annual "scarecrows" we put up in the front yard every year! It's nice this year because we actually have a real front yard!!


Day 2: Monday ~ When your son comes home and says he needs to write to the Pope and ask him some questions...you say yes :) He's making sure I mail it, too!!! Love how he 1) Decided to use his FULL name to sign it. 2) Spelled "William" wrong! LOL! Goes to show how much he writes his name like that!


Day 3: Tuesday ~Sleeping on the floor like an angel :) LOL!


Day 4: Wednesday ~ Coffee and Hobby Lobby! HEAVEN!!!! I went to get some finishing touches for the guest room.

Day 5: Thursday ~ The guest room is DONE!!! (well, almost...just a few paint touch ups here and there)!


Day 6: Friday ~ Blessing of the Animals at school! The kids BEGGED me all week to bring the guinea pigs and I said no. Then Brooke called me from SCHOOL Friday morning begging again so I did it :) #momoftheyear. They were SO happy to see the Pigs!! :) Even Will!




Day 7: Saturday ~ Soccer all day (one loss, one win) followed by a super fun evening with my friend Heidi and her gorgeous family! We all had so much fun!
