Recipe Wednesday: Turkey Chimichangas


 This is one of the recipes I read and distinctly remember thinking, "ok, that sounds really weird!" But then I made it anyway! That was about 10 years ago and it's been on my meal rotation ever since! Just trust me, it's good!!! And it's not deep fried :) This recipe makes 4 giant "chimis!!"




Turkey Chimis

1 lb. smoked turkey (from the deli or just in the package-- try to get the thick-cut)
1 tablespoon chili powder**
2 cups shredded cabbage ( I buy it preshredded, cold slaw mix is fine too)
1-2 tablespoons adobo sauce from chipotles in adobo** (see below)
1 small can of tomato sauce
3 scallions, chopped
4 large flour tortillas (burrito size)
1-2 cups sharp cheddar (or your favorite cheese)

**Keep in mind, chipotles in adobo are spicy, as is the chili powder so adjust according to you taste. For the kids, I mix together everything except the chili powder and chipotles, wrap their chimis and then add in the spicy stuff for ours :) 

 Chipotles in Adobo--this is the brand I use, but any brand is fine:

Toppings (optional)
- Sour cream
- Avocado
- Salsa
- Cilantro
- Tomatoes

1. Mix together first 6 ingredients.

2. Warm tortillas in the microwave for a few seconds so they get slightly soft.

3. Fill each tortilla with 1/4 of the turkey mixture and a handful of cheese; roll like a burrito.

4. Brush chimis with a little olive oil or spray with Pam.

5. Place into a 400 degree oven until golden brown (about 10-15 minutes).

6. Top with the extra toppings!
